Description
One calls Cochineal the female insect from which one extracts
the natural dye: Carmine.
Tuna (Opuntia Ficus Indica) is the plant which lodges the cochineal.
Preparation of the product
Once finished the vegetative cycle of the Cochineal, one carries
out his harvest, then it is dried and dehydrates it in its natural
form, either with solar heat, or in furnaces with hot air.

Properties
The Cochineal is the only commercial insect in the
world which produces the red natural dye called Carmine. Carmine
is the dye extracted from the adult female by a process of aqueous
extraction (hot water). Carmine is water soluble, the color varies
according to the pH; Carmine is very stable with the light and
with the heat, it is also resistant to oxidation.
The Carmine obtained from the Cochineal is used
in the colouring of food in food industry.
